My Baby's Favorite Breakfast

Justin ate half a pan of this last Sunday! I can't believe he could eat so much--his belly sure was round afterward!

Baby Breakfast

1/2 cup Heart-Healthy Bisquick Mix
1 cup milk
2 eggs.

Mix together, then pour into greased 8x11 pan. Sprinkle with about 1 cup grated cheese. Bake in 400 degree oven until golden, about 20-25 minutes.

This bakes into a firm souffle, and can be cut into small bite-sized pieces. My little guy loves it cold, too.

I use the Heart-Healthy Bisquick because it doesn't contain trans-fats.

This is Me

Okay, so now that you've been adequately warned, I guess I can tell you more about me.

Peach is my nickname--almost nobody on earth calls me by that anymore--it was my dad's favorite name for me, and now that he's gone, I kind of miss hearing it.

I am a Christian.

I am married almost 20 years to the most wonderful and handsome of men. He's a strong Christian believer and I'm very proud of all that he is to me and our children. We have 8 delightful kids, ranging in age from 1 year to 17 years. I believe that a wife is to be a "helpmate" to her husband, and my role is love, honor, and respect my husband--in other words, "submit" to his leadership. I believe in disciplining my children. Discipline enables the parent to bring the child's heart and will into alignment with the parent. Once a parent has a child's heart, it's possible to teach them about the Lord and life. I know that these beliefs might sound strange and archaic to some, but I find that they lead to peace and happiness in our home.

I am happy with my life! There are so many things I enjoy doing, but seem to have little time to do them these days. Maybe that helps the enjoyment be that much sweeter. I don't think I'll go into it all now--I'm sure you'll learn more on future posts.

I'm Blogging!

Okay, this is new territory for me. A blog! I've moved into the 21st century! My kids have blogs. They are quite impressive: lots of beautiful pictures, sound clips, and very intelligent sounding essays. I don't think I'll be able to compete. I think what I'll do here is just use this blog to record some of the random musings of a homeschooling mom of eight kids. Maybe my latest pet peeve will show up here, maybe a favorite recipe or two, and very occassionally something really worthwhile! I used to write a lot, now it seems my brain is somewhat numb and drained of the creative juices that used to flow through there. I'm hoping that maybe, just maybe, I can get past some of my mental inertia and get some thoughts on "paper" once again. So, I guess this is something of a warning: what follows may or may not benefit you, the reader. It's just the outworking of my personal mental therapy!
